TOULOUSE
One of our most popular pork varieties with lashings of garlic and parsley. Our customers take them to France!
PERIGORD
Traditionally made with truffle, we substitute wild field mushrooms, the pork is marinated in red wine and quatre épices.
ITALIAN SWEET
A milder version of our Italian spicy pork with garlic, white wine and a touch of aniseed.
ITALIAN SPICY
Great with pasta dishes. Pork, garlic, paprika, white wine with a strong flavour of fennel. Another top seller.
SPANISH
Based on Chorizo, another winner in our repertoire. Pork with wine garlic and bell peppers.
GREEK ORANGE
Pork and Aberdeen beef with orange zest, cinnamon and white wine.
CREOLE
Highly spiced pork and lamb with lots of chili. Not for the timid of taste.
NORFOLK (USA)
Traditional American beef and pork recipe with mature cheese, mustard seed, herbs and red wine.
BOEREWORS
A traditional beef and pork recipe from South Africa. We're often told ours is the best available! Sold by length from the coil.
CALIFORNIA
Pork with paprika, chili and capsicum peppers. Slightly spicy and great for barbecue.
ZIGEUNER BRATWURST
Finely chopped Hungarian gypsy sausage with pork, paprika, chili and mixed herbs.
THURINGER BRATWURST
Finely chopped traditional German pork sausage. Mild with that distinctive Bratwurst flavour.
WEISWURST
Traditional German boiled sausage, only available for special orders minimum 10 lbs quantity.
CAJUN
Medium spicy pork, based on a recipe created by the Cajun Indians of Louisiana. Great with Jambalaya.
ARMENIAN LAMB
A really superb Caucasian recipe with chopped onions, garlic black pepper and mint. No pork added.
MOROCCAN LAMB
Our Merguez is the speciality of the house. The best you'll find this side of Casablanca! Made purely of Lamb and available in lamb casing to special order.
SUJOUK
All beef recipe from the Levant (Lebanon, Syria) with garlic and seven spices.
THAI SPICY
Pork with lime, lemon grass, coriander and chili, a new favourite.
APPLE & STILTON
Pork with Bramley apples, cinnamon, mildly seasoned with the addition of pure Stilton cheese.
